COFFEE JELLIES WITH COCONUT MILK
SERVES 2-10, DEPENDING ON HOW PIGGY YOU ARE
I make a huge pot are dastardly strong french press coffee every morning and every once in a while (though rarely, I admit) J and I don’t manage to polish it all off. This is an almost laughably easy recipe, born of those leftovers — and it comes in handy around 4pm when you need that caffeine and sugar one-two punch. Also, who doesn’t love Jell-O?
4 cups strong coffee
1/2 – 3/4 cup sugar, according to your sweet tooth
2 packages plain gelatin (I use Knox)
2 tablespoons coconut milk
1. In a small saucepan, heat coffee until simmering, and then add in sugar and gelatin. Stir until they are completely dissolved. Remove from heat. Pour coffee mixture into a 9″ x 13″ baking pan in a thin layer. Refrigerate for 3 hours or until firm.
2. Once firm, slice the jelly into 2″ cubes. Drizzle them with coconut milk if you’re feeling fancy, and slurp them down.
